Birch syrup was inspired by belles lettres

A team of three Estonians has launched an enterprise that produces an innovative kind of taste – birch syrup. A small producer as they are, the ingredient is so rare that their output already makes them medium range players on global scale.

The literary scholar Piret Peiker, the historian Ulvi Maamees and Heiki Migur, a technology wizard with a law degree, share a common hobby that has developed into their job. They are all interested in the art of cooking and in entrepreneurship. In November 2014 they founded their firm Kasekunst (Birchcraft in English) that turns birch sap into syrup. „I am actually a Tammsaare scholar,” Piret Peiker says, „and in that connection I have been reading about agriculture for years. I have had this urge for a long time that I would like to do something myself, in practice.” Thus Peiker sought the cooperation of Ulvi Maamees, with whom they had once worked together at the Estonian Institute of Humanities. They also invited Migur to join them.
